For eg: my employer provides me with a 401(k) plan that allows me to invest the money in individual stocks rather than the default mutual fund choices that the account provides. I was wondering if any provider offers a 529 plan with this kind of flexibility.

With 529 plans you are only allowed to choose from the approved funds offered by the plan. The way these accounts are structured and because of the tax benefits they are not allowed to be actively traded. You can certainly switch investments around (twice in 2009) but it always has to be within the constraints of the plans offerings.
